Tradition meets innovation

Cooking in copper cauldrons; skilful master cheese makers; a slow ageing process. All for a product that preserves the same production techniques as nine centuries ago: no additives or preservatives, just precious, locally sourced milk, rennet and salt. In the area circumscribed by the Po and Reno rivers, lie about 400 small artisan dairies.

Parmigiano Reggiano is only one of the food specialities of Emilia Romagna, a region that boasts the richest variety of typical products in Italy, and indeed Europe. The region's 39 PDOs and PGIs are flanked by over 300 traditional specialities, 29 DOC, DOCG and IGT wines, and dozens of major all-Italian brands.  

There’s Parma ham, which is produced south of the Roman Via Aemilia, between the Enza and Stirone Rivers, an area that boasts the particular climatic conditions required to season the ham.  Or the Traditional Balsamic Vinegar of Modena and Reggio Emilia, which must age at least 12 years and goes through a process of progressive concentration before taking on the organoleptic characteristics that make this product so unique. Or again, the Extra Virgin Olive Oil of Brisghella, the Peaches and Nectarines of Romagna, the Asparagus of Altedo, the Mortadella of Bologna and the Culatello of Zibello.  And then there are the wines of Emilia Romagna:  Pignoletto, Lambrusco, Ortrugo, Sangiovese

Quality raw materials, environmentally friendly and healthy cultivation and production techniques, strict regulations, traceability, controls throughout the supply chain…

In Emilia Romagna, tradition meets innovation. 

These examples of excellence reveal the land's taste for good living, but also its belief in following strict regulations and procedures, the only real bulwark against counterfeiting. 

These products could only have been born here, in an area that is extraordinarily rich in biodiversity, history and culture. These products speak of Emilia Romagna and its people, right across the globe.
